You reach your hand into or along the rim of your water jug and feel it — that slightly slippery, gel-like coating on the interior walls. That slippery interior is biofilm, a living microbial layer that water alone can't remove. The fix requires a deep cleaning process for a 5 gallon water jug, not a rinse. The Science of the Slime

EPS (extracellular polymeric substances) are the polysaccharide materials bacteria secrete to form the protective matrix that defines biofilm. These compounds are hydrophilic — they attract and retain water — which gives the biofilm surface its characteristic slippery, gel-like feel. The sliminess is actually the biofilm's physical protection mechanism — the hydrated EPS matrix is what makes mature biofilm significantly more resistant to chemical sanitizing agents than free-floating bacteria.

When you feel sliminess, the biofilm has progressed well past initial attachment into mature colony stage. The bacteria have been present on the surface for at least 24–72 hours (at room temperature) and have likely been dispersing daughter cells into your drinking water for at least 24 hours before the slipperiness became detectable.

⚠️ What "slimy jug" means for recent water consumption: A jug that's slimy today has had mature, dispersing biofilm for 1–3 days minimum. The water consumed from this jug during that period contained dispersed biofilm bacteria. For healthy adults this is typically not an acute health event, but for household members who are immunocompromised, elderly, very young, or pregnant, water from a slimy jug represents a meaningful exposure to potentially pathogenic bacteria. Address the problem immediately and consider whether anyone in the household experienced unexplained gastrointestinal symptoms in recent days.

Stop using the jug immediately

Don't drink water from a jug you can feel is slimy. Empty and discard the current water before beginning treatment.

Perform a 3-tablet aggressive treatment

Also treat the dispenser spigot and drip tray

A slimy jug has almost certainly also contaminated the dispenser — biofilm disperses into the water column and contaminates every surface the water contacts. Clean the spigots with a sanitizing wipe, empty and scrub the drip tray, and wipe the probe and seating collar before replacing the treated jug.
